Method

  1. Whisk the eggs, egg whites, milk, vanilla and cinnamon in a shallow bowl until evenly combined.

  2. Mix the light cream cheese, chopped strawberries and jam. Keep chilled while the toast cooks.

  3. Dip each bread slice briefly in the egg mixture, turning to coat both sides without letting the bread collapse.

  4. Heat the measured olive oil in a non-stick pan and cook for 2-3 minutes per side, until golden and the egg coating is fully set.

  5. Spread the strawberry cheesecake filling between the slices, top with optional berries and serve warm.

STORAGE & REHEATING
