Divide the finished dish evenly into 2 portions.Batch total: 1286 kcal

Method

  1. Cook pasta until al dente, reserving a little cooking water.

  2. Season salmon with part of the salt and pepper; pan-sear until opaque and cooked through, then rest.

  3. Soften onion, garlic and tomatoes in the same pan.

  4. Turn the heat low and stir in soft cheese, milk and a splash of pasta water.

  5. Wilt in spinach, fold through pasta and serve with the salmon divided equally.
