Divide the finished dish evenly into 2 portions.Batch total: 1280 kcal

Method

  1. Place the paneer in a bowl. Add 16 g cornflour, paprika, salt and black pepper, then toss until evenly coated. Add 2.5 g olive oil and toss again.

  2. Air-fry at 180°C for 14 minutes, shaking halfway, until golden and crisp.

  3. Heat a non-stick pan over medium heat with the remaining 2.5 g olive oil. Add the red onion and bell pepper and cook for 3–4 minutes. Stir in the ginger-garlic paste and cook for 30–60 seconds.

  4. Mix the ketchup, dark soy sauce, rice wine vinegar, sweet chilli sauce, remaining 3 g cornflour, water, brown sugar and sriracha until smooth.

  5. Add the crisp paneer to the pan, pour in the sauce and toss over medium heat for 1–2 minutes until thick and glossy.

  6. Serve immediately. Rice or wraps are optional serving suggestions and are not included in the displayed nutrition.

STORAGE & REHEATING

Cool promptly and refrigerate in a sealed container for up to 2 days. Reheat once in a pan or air fryer until piping hot throughout.

Air fryer, non-stick frying pan, two mixing bowls, digital scales and cooking spoon.

PRACTICAL ADJUSTMENTS

For a milder sauce, reduce the sriracha and sweet chilli sauce. For less salt, use reduced-salt soy sauce or replace part of the soy sauce with water. Add broccoli, sugar-snap peas or mushrooms for more vegetables. Serve with a measured portion of rice or noodles and recalculate when changing products or quantities.

FREEZER GUIDANCE

Freezing is not preferred because paneer and peppers can lose texture. If frozen, cool quickly, freeze in individual portions and thaw fully in the fridge before reheating once until piping hot.

DIETARY SUITABILITY

Vegetarian: suitable when vegetarian-labelled paneer and sauces are used.

Vegan or dairy-free: replace the paneer with extra-firm tofu and check every packaged sauce label.

Gluten-free: use tamari specifically labelled gluten-free and check every sauce label.
